As I said on the Paisley blog, we are enjoying some of our favorite things this New Years Day. Things like football, tacos, and sweet tea. Here in our favorite taco recipe, (adapted from a recipes.com recipe) :

  • 2 cloves of garlic
  1. Place beef roast in crock of a slow cooker. Sprinkle taco seasoning over the beef; top with onion slices and other ingredients. Add water.
  2. Cook on Low 8 to 10 hours. Or high 4- 5 hours.
  3. Remove beef to a cutting board and shred with a pair of forks. Return beef to slow cooker and get the tortillas ready!
  4. *It is also so good with guac, and sour cream and black beans.
  5. For next day, I make a casserole using the above ingredients in layers. Sometimes we even add rice and black olives for our do- overs.
